Quick & Easy Meals - Chicken Casserole - Cheeseburger in Paradise - Doritos Chicken Casserole
I’m so happy that you visited my kitchen today and I also hope you enjoy all the quick and easy meals from our week. It was another great week and I decided to try out a couple of new casseroles that had caught my eye. They are all quick and easy, delicious and we had leftovers for a couple days too. Today’s video is a collab with my friend Amanda @Faith Food and Family and she has quickly become a great new friend of mine. Stella’s Chicken Casserole
1 pkg chicken breasts (I use boneless, it takes less time to cook)
2 cans cream of chicken soup
2 cups shredded cheddar cheese
1 cup chicken broth (I use the broth off the chicken I stewed)
½ stick butter
½ cup mayo
1 small package Pepperidge Farm stuffing mix (cornmeal flavored)
1 ½ cup milk
Preheat oven to 375. Stew chicken breasts until tender (about 1-2 hours depending on size of package. When tender, tear the chicken into shredded pieces and layer in the bottom of a 9 x 13 x 2 casserole dish (sprayed with Pam)
Mix soups, mayo and milk together in a separate bowl. Spread this mixture over the chicken. Spread cheese on top of this, then finish the layers with the stuffing mix. Melt the butter with the chicken broth in a separate bowl in the microwave and spread over the stuffing mix. Cover with foil. Bake for 35-45 minutes.
